Alfredo Spaghetti Squash

Tender roasted spaghetti squash filled and baked with a creamy alfredo-style sauce made from butter, cream cheese, mozzarella, and baby spinach.

Ingredients

  • 1 spaghetti squash
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoon cream cheese
  • 1 cup mozzarella cheese
  • 1 cup baby spinach

Method

    Preheat oven to 400°F. Fill a baking sheet with about 1 inch of water.

    Cut spaghetti squash in half crosswise, scoop out the seeds, and discard. Place cut side down in the prepared baking sheet and bake until tender, about 45 minutes.

    Use a fork to pull apart the strands of squash and set half of them aside.

    Season the spaghetti squash halves with salt and pepper, and add butter, cream cheese, and half the mozzarella cheese. Stir together to combine.

    Add the spinach and reserved spaghetti squash strands, season with additional salt and pepper, and top with the remaining mozzarella cheese.

    Broil for 3-4 minutes until the cheese is bubbly and melted. Enjoy immediately.
