Bacon Jam Smashburger
Crispy smashburgers topped with a sweet and tangy homemade bacon jam and special burger sauce.
Ingredients
- 2 lbs of ground beef 80/20, divided into 4 oz patties
- 1/2 tsp salt, 1/4 tsp black pepper, 1/2 tsp onion powder per patty
- 8-10 oz of bacon, sliced
- 1 onion, sliced
- 1/4 cup brown sugar
- 3 tbsp honey/maple syrup
- 1 tbsp balsamic vinegar or glaze
- 1/2 tsp chili powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 mayo
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp Dijon mustard
- 2 tbsp pickle juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp cayenne pepper

In a small bowl, whisk together the mayo, ketchup, yellow mustard, Dijon mustard, pickle juice, garlic powder, onion powder, and cayenne pepper to make the burger sauce; set aside.

Crisp up the bacon pieces on a skillet until slightly crispy. Remove bacon and drain on paper towel.

Use the same grease in the skillet to sauté the sliced onions along with the chili powder, 1 tsp salt, and 1/2 tsp pepper.

Add brown sugar, honey or maple syrup, and balsamic glaze to the skillet. Cook until slightly sticky and thick, then remove from heat to thicken as it cools.

Season the 4 oz ground beef patties with salt, black pepper, and onion powder.

Sear and smash the patties on a hot skillet until crispy browned edges form, then flip and finish cooking.

Assemble the smashburgers with the burger sauce and prepared bacon jam.
