Baked Honey Mustard Salmon
Flaky, moist salmon baked in a homemade honey mustard sauce with fresh garlic, smoked paprika, and lemon.

Ingredients
- 1 pound salmon fillet
- 1 tbls olive oil
- 2 lemons; 1 sliced and the other is for juicing
- 4 tbls honey
- 4 tbls Dijon
- 2 cloves garlic, grated
- 1/4 tsp smoked paprika
- Pinch cayenne
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 tsp chopped fresh parsley

Preheat the oven to 400F.

Combine the olive oil, garlic, juice of 1/2 lemon, honey, mustard, paprika, cayenne, salt, and pepper and set aside.

Line a small casserole with the thin lemon slices and place the salmon on top.

Pour 1/2 of the sauce over the salmon and spread until well coated. Bake for 12-14 minutes, or until salmon is cooked through.

Pour the remaining sauce over the salmon and broil for about 2 minutes more.

Remove from broiler, squeeze remaining 1/2 lemon on top, and sprinkle with parsley.
