Beef Chow Fun
A high-protein, lower-calorie version of classic Chinese takeout beef chow fun, perfect for meal prep.
Ingredients
- 24oz flank (leaner) or NY strip steak
- 150g rice noodles
- 1 white onion
- 1 bundle scallions
- 1/3 cup low sodium soy sauce
- 1 tbsp soy sauce (for marinade)
- 2 tbsp cornstarch
- 2 tbsp swerve 0-cal brown sugar
- 2 tbsp oyster sauce
- 1.5 tbsp ginger paste
- 1.5 tbsp garlic paste
- 1 tsp baking powder
- White pepper (can sub black pepper)
- Sesame oil
- Optional sesame seeds

Slice your steak into thin strips (optionally freeze for 30 minutes prior to make slicing easier).

Marinate the sliced steak with 2 tbsp low sodium soy sauce, 1 tbsp oyster sauce, cornstarch, 0-cal brown sugar, garlic paste, ginger paste, and a tsp each of white pepper and baking powder for a minimum of 30 minutes.

Slice the white onion into 1-inch cubes and scallions into 3-inch strips.

Make the sauce by combining 1/3 cup low sodium soy sauce, 2 tsp sesame oil, 1 tbsp 0-cal brown sugar, 1 tsp white pepper, 2 tsp garlic paste, 2 tsp ginger paste, and a cornstarch slurry.

Cook the steak over high heat for 2-3 minutes per side, then remove and let rest.

Lower the heat, add the onions to the pan, and brown for about 5 minutes.

Add the cooked steak, sauce, noodles, and scallions to the pan.

Mix thoroughly and let simmer for 3-5 minutes before serving.
