Original post

Ingredients

  • 6 slices of Streaky Bacon
  • 1x 350g/12.3oz pack of Croissant Dough (keep chilled until needed)
  • 90g / 3oz Cranberry Sauce
  • 125g / 4oz Brie, sliced into wedges
  • 1 Egg, beaten for egg wash
  • few pinches of Chilli Flakes (optional)
  • few pinches of Poppy Seeds (optional)

Method

  1. 1

Cook the bacon using your preferred method to your desired texture, pat dry to remove excess fat, leave to cool completely to room temperature, and halve each slice.

  2. 2

    Preheat the oven to 180C/350F.

  3. 3

Place a sheet of baking paper on a large baking tray and place a 10cm/4-inch ramekin or bowl in the centre.

  4. 4

Unpack the dough and use a knife to separate each triangle, then evenly circle them around the ramekin with the points facing outwards, overlapping as necessary.

  5. 5

Remove the ramekin and spread cranberry sauce around the centre where the dough overlaps.

  6. 6

Top with the bacon, brie, and chilli flakes if using.

  7. 7

One by one, fold over the corners of the dough to cover the filling, wrapping underneath and back on top to seal the filling with no gaps.

  8. 8

Brush the dough with egg wash and sprinkle with poppy seeds if using.

  9. 9

Bake for around 17-20 minutes or until deep golden and crisp.
