Bulgarian Stuffed Peppers with Creamy White Sauce

Traditional Bulgarian stuffed bell peppers filled with seasoned ground pork and rice, baked and served with a rich, creamy yogurt-based white sauce.

Ingredients

  • medium bell peppers
  • avacado oil
  • diced onion
  • peeled grated carrot
  • minced garlic
  • salt, paprika, & dry oregano
  • rice
  • tomato sauce
  • water
  • ground pork
  • egg yolks
  • yogurt
  • salt
  • all-purpose flour
  • liquid from the baking dish after the peppers have baked

Method

    Heat avocado oil in a pan and sauté the diced onion, grated carrot, and minced garlic until softened.

    Add the ground pork, salt, paprika, dried oregano, rice, tomato sauce, and water; cook until the filling begins to come together.

    Prep the medium bell peppers by removing the tops and seeds, then stuff each pepper with the meat and rice filling.

    Arrange the stuffed peppers in a baking dish, add water to the dish, and bake until the peppers are tender and the meat and rice are fully cooked.

    Remove the peppers from the baking dish and reserve the pan liquid.

    In a saucepan, whisk together the egg yolks, yogurt, salt, flour, and the reserved baking liquid, then simmer gently until thickened into a creamy sauce.

    Serve the warm stuffed peppers topped with the creamy white sauce.
