Chez Ma Tante's Pancakes

Famous crispy-edged, diner-style pancakes with a hint of lemon zest, fried in clarified butter.

Ingredients

  • 1 large egg
  • 1 egg yolk
  • 2½ tbsp baking powder
  • 2 tbsp granulated sugar
  • 1 tsp kosher salt
  • 1¼ cups whole milk
  • 1 cup all-purpose flour
  • 1 cup + 2 tbsp clarified butter, melted
  • Zest of 1 lemon
  • Salted butter and maple syrup, for serving

Method

    Whisk the egg, egg yolk, baking powder, sugar, salt, and lemon zest together until fluffy.

    Alternate adding the milk and flour, stirring until just combined and still slightly lumpy.

    Heat a heavy pan (preferably cast iron) on medium-high for 5 minutes, then add ¼ cup of clarified butter.

    Once the butter is shimmering, ladle ⅓ cup batter per pancake into the pan, ensuring butter remains in the pan at all times.

    Cook for 2-3 minutes per side until dark, crispy edges form.

    Serve hot with salted butter and maple syrup.
