Ingredients

  • 24oz Chicken Breast
  • 75g Green Onion
  • 50g Red Pepper
  • 10g Parsley
  • 4 Cloves Garlic
  • 3 Big Pinches Sea Salt
  • 2 Big Pinch Black Pepper
  • 4 Brioche Buns
  • 84g 2% Colby Jack Cheese
  • Splash of Chicken Broth
  • Lettuce
  • Tomato
  • Red Onion
  • 100g Plain Non Fat Greek Yogurt
  • 80g 2% Cottage Cheese
  • 30g Sugar Free Honey Mustard
  • 25g Sugar Free BBQ Sauce
  • 10g Djion Mustard
  • 5g Pickle Juice (from jar)
  • 2g Zero Cal Sweetener

Method

  1. 1

Add the Greek yogurt, cottage cheese, sugar-free honey mustard, sugar-free BBQ sauce, Dijon mustard, pickle juice, and sweetener into a small blender and blend until smooth.

  2. 2

Flatten the chicken breasts and finely mince using a knife or food processor.

  3. 3

In a bowl, combine the minced chicken, diced green onion, diced red pepper, finely chopped parsley, minced garlic, sea salt, and black pepper. Mix well and form into 4 evenly sized patties.

  4. 4

Preheat a pan over medium-high heat. Place a patty in the pan and press down firmly with a burger press. Cook with the press on top for 3-4 minutes, then flip.

  5. 5

Top the patty with cheese and add a splash of chicken broth to the pan. Cover with a lid to steam and melt the cheese.

  6. 6

Assemble the sandwiches by layering a toasted brioche bottom bun with sauce, lettuce, tomato, red onion, the cooked smash patty, additional sauce, and the top bun.
