Chicken Salsa Verde

A quick and flavorful Mexican-inspired chicken dish simmered in salsa verde and finished with melted cheese.

Ingredients

  • 5-6 chicken thighs or 4 medium chicken breasts
  • 1 (15 ounce) jar salsa verde, or 2 cups homemade salsa verde
  • 1/2 cup shredded Monterey Jack or Tex-Mex cheese blend
  • 1/2 cup chicken bone broth
  • 1/2 teaspoon salt and pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 teaspoon paprika
  • 1 Tbsp olive oil
  • salt and freshly ground black pepper, to taste
  • fresh cilantro
  • fresh lime slices, to garnish
  • optional: thinly sliced scallions, to garnish

Method

    Add seasoning and oil to chicken. Massage seasoning well into chicken.

    Add 2 tablespoons olive oil to an oven-safe skillet or pan.

    Sear and cook chicken 3-4 minutes on both sides. Cover with lid for last 1-2 minutes. Remove the chicken and set aside.

    In the same pan, deglaze with broth by scraping the bottom of the pan for all the flavors. Add in the salsa verde sauce and let it simmer for 2 minutes. Tuck in the chicken and let it cook with the sauce until sauce is reduced by half, about 4-5 minutes on medium low heat.

    Garnish with cheese and place in the oven to melt the cheese.

    Serve with warm tortillas and Mexican rice.
