Chipotle Chicken in Creamy Chipotle Sauce

Tender chicken thighs and leg quarters seasoned and seared, then simmered in a rich, creamy chipotle and bell pepper sauce.

Ingredients

  • 2 pounds bone-in chicken thighs and quarter legs
  • 1.5 tablespoons taco seasoning (for marinade)
  • 2 tablespoons chipotle adobo sauce (for marinade)
  • 1 tablespoon oil
  • 1 tablespoon mayonnaise
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 red bell pepper, cut into large chunks
  • 1 green bell pepper, cut into large chunks
  • 1/2 red onion, cut into large chunks
  • 1 tablespoon taco seasoning (for sauce)
  • 1.5 tablespoons chipotle adobo sauce (for sauce)
  • 3/4 - 1 cup chicken or veggie broth
  • 1/2 cup heavy whipping cream

    Season the chicken with 1.5 tablespoons taco seasoning, 2 tablespoons chipotle adobo sauce, 1 tablespoon oil, mayonnaise, and salt.

    Chop the red and green bell peppers and red onion into large chunks.

    In a skillet, heat a little oil over medium heat and cook the chicken for about 7 minutes on each side, then remove from the pan (do not worry about cooking fully through yet).

    In the same skillet, add 1 tablespoon of olive oil and the chopped peppers and onion; cook for 1 to 2 minutes until slightly softened.

    Stir in 1 tablespoon taco seasoning and 1.5 tablespoons chipotle adobo sauce until well mixed.

    Pour in the broth and heavy whipping cream, bringing the sauce to a gentle boil.

    Return the chicken to the sauce and let it simmer until the sauce thickens and the chicken is fully cooked through.

    Serve over white, yellow, or Spanish rice with warm tortillas.
