Chipotle Chicken in Creamy Chipotle Sauce
Tender chicken thighs and leg quarters seasoned and seared, then simmered in a rich, creamy chipotle and bell pepper sauce.
Ingredients
- 2 pounds bone-in chicken thighs and quarter legs
- 1.5 tablespoons taco seasoning (for marinade)
- 2 tablespoons chipotle adobo sauce (for marinade)
- 1 tablespoon oil
- 1 tablespoon mayonnaise
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 red bell pepper, cut into large chunks
- 1 green bell pepper, cut into large chunks
- 1/2 red onion, cut into large chunks
- 1 tablespoon taco seasoning (for sauce)
- 1.5 tablespoons chipotle adobo sauce (for sauce)
- 3/4 - 1 cup chicken or veggie broth
- 1/2 cup heavy whipping cream

Season the chicken with 1.5 tablespoons taco seasoning, 2 tablespoons chipotle adobo sauce, 1 tablespoon oil, mayonnaise, and salt.

Chop the red and green bell peppers and red onion into large chunks.

In a skillet, heat a little oil over medium heat and cook the chicken for about 7 minutes on each side, then remove from the pan (do not worry about cooking fully through yet).

In the same skillet, add 1 tablespoon of olive oil and the chopped peppers and onion; cook for 1 to 2 minutes until slightly softened.

Stir in 1 tablespoon taco seasoning and 1.5 tablespoons chipotle adobo sauce until well mixed.

Pour in the broth and heavy whipping cream, bringing the sauce to a gentle boil.

Return the chicken to the sauce and let it simmer until the sauce thickens and the chicken is fully cooked through.
