Ingredients

  • 6 Chicken Thighs (Bone-in)
  • 2 Tsp Garlic Powder
  • 2 Tsp Onion Powder
  • 1 Tsp Italian Seasoning
  • 1 Tsp Red Chili Flakes
  • 1 Tsp Black Pepper
  • Pinch of Salt
  • 1 1/2 Tsp Cayenne Pepper
  • 1 Tbsp Olive Oil
  • 6 Strips Bacon
  • 2 Shallots
  • 5 Cloves Garlic
  • 5-6 Bella Mushrooms
  • 2 Tbsp Butter
  • 1/4 Cup Chicken Broth or White Wine
  • 1 1/2 Tsp Cajun Seasoning
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Powder
  • 1 Tsp Italian Seasoning
  • 1 Pint Heavy Cream
  • 1 Cup Sun Dried Tomatoes
  • 1 Cup Parmesan

Method

  1. 1

Season the chicken thighs evenly with garlic powder, onion powder, Italian seasoning, red chili flakes, black pepper, salt, cayenne pepper, and olive oil.

  2. 2

Cook the seasoned chicken thighs in a skillet for 15-20 minutes until cooked through and browned, then remove from the pan and set aside.

  3. 3

Cook the bacon strips until crisp, remove from the pan, and chop into pieces.

  4. 4

In the remaining fat and butter, sauté the chopped shallots, minced garlic, and sliced mushrooms until tender and fragrant.

  5. 5

Deglaze the skillet with the chicken broth or white wine, scraping up any browned bits from the bottom.

  6. 6

Pour in the heavy cream and season with cajun seasoning, onion powder, garlic powder, and Italian seasoning.

  7. 7

Stir in the sun-dried tomatoes and grated parmesan cheese until the cheese is melted and incorporated.

  8. 8

Return the cooked chicken thighs and bacon to the skillet and simmer on low heat for 10-15 minutes until the sauce has thickened and the chicken is fully coated.
