Creamy Garlic Parmesan Chicken with Chips
Crispy homemade potato chips paired with seasoned chicken breasts in a rich garlic parmesan cream sauce.
Ingredients
- 3 chicken breasts
- 1 tbsp smoked paprika
- 1 tbsp onion granules
- 1 tbsp garlic granules
- Salt and freshly ground black pepper, to taste
- 1 shallot, finely chopped
- 3 cloves garlic, crushed
- 125ml single cream
- 200ml hot chicken stock
- 25g parmesan, finely grated
- 800g Maris piper potatoes, washed and cut into chips
- 1 tbsp extra virgin olive oil

Preheat the oven and toss the cut potatoes with extra virgin olive oil, salt, and pepper, then spread onto a baking tray and bake until golden and crisp.

Season the chicken breasts evenly with smoked paprika, onion granules, garlic granules, salt, and black pepper.

Sear the seasoned chicken breasts in a hot pan until cooked through, then remove and set aside.

In the same pan, sauté the chopped shallot and crushed garlic until fragrant and softened.

Pour in the hot chicken stock and single cream, bringing the mixture to a gentle simmer.

Stir in the finely grated parmesan until melted and the sauce thickens slightly.

Return the cooked chicken breasts to the pan to coat in the sauce, and serve alongside the hot chips.
