- 2 chicken breasts
- 2 tbsp olive oil
- 1 tsp tomato paste
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/2 tsp dried mixed herbs
- 1 tsp paprika
- 1/2 tsp cayenne pepper (optional)
- 2 tbsp butter
- 1/2 tsp salt (for sauce)
- 1/2 tsp black pepper (for sauce)
- 1/2 tsp garlic powder (for sauce)
- 1/2 tsp dried mixed herbs (for sauce)
- 1 tsp paprika (for sauce)
- 1/2 tsp cayenne pepper (optional, for sauce)
- 100ml double cream
- 2 tbsp grated parmesan
- Small handful of chopped chives (to finish)

In a bowl, mix the chicken with olive oil, tomato paste, and the seasonings listed for the chicken.

Heat a pan over medium-low heat and cook the chicken for 5–6 minutes on each side, until golden and cooked through. Remove and set aside.

In the same pan, melt the butter, add the sauce seasonings, and let them sizzle for 30 seconds.

Pour in the double cream, stir well, and simmer for a minute.

Add parmesan and stir until melted and creamy.

Serve the chicken with mashed potatoes if desired, pour the creamy sauce over the top, and finish with a sprinkle of fresh chives.
