Crispy Baked Chicken Thighs with Dill Sauce

Juicy, crispy skin-on bone-in chicken thighs seasoned with dill and spices, served with a creamy homemade lemon dill sauce.

Ingredients

  • 4 skin-on bone-in chicken thighs
  • 1 tbsp avocado or olive oil
  • 1 tbsp dijon or German mustard
  • juice of 1 lemon
  • a couple pinches salt
  • 2 tbsp onion powder
  • 1 tbsp dried dill
  • 1 tbsp sweet paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tbsp baking powder
  • 4 tbsp plain thick greek yogurt (or sour cream)
  • 3 tablespoons mayo
  • juice of 1 large lemon
  • a handful fresh dill
  • 1 tsp onion powder
  • 1/2 tsp Aleppo or any chili pepper
  • pinch of salt

Method

    Preheat oven to 425F.

    Dab the chicken thighs dry with a paper towel and place them into an oven-safe dish, ensuring they are not overcrowded. Allow the chicken to come up to room temperature for about 30 minutes before seasoning.

    Drizzle the chicken with the avocado or olive oil, mustard, lemon juice, salt, onion powder, dried dill, sweet paprika, cayenne pepper, and baking powder. Mix well to coat evenly.

    Bake at 425F for an initial 35 minutes. Remove from the oven, spoon the bottom pan juices over the chicken, and return to the oven for another 5 minutes.

    Make the sauce by processing the greek yogurt (or sour cream), mayo, juice of 1 large lemon, fresh dill, onion powder, Aleppo pepper, and a pinch of salt until well combined. Taste and adjust seasoning as desired.

    Remove the chicken from the oven and serve warm with the dill sauce.
