Ingredients

  • 2 salmon filets
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/8 tsp paprika
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves of garlic
  • 4 sprigs of thyme
  • Lemon zest
  • Lemon juice
  • Parsley

Method

  1. 1

Let the salmon come to room temperature.

  2. 2

Pat the salmon dry, especially the skin, then score the salmon skin.

  3. 3

Season both sides with salt, black pepper, and paprika, rubbing the spices into the slits.

  4. 4

Heat a skillet over medium heat, then add the olive oil once the pan is hot.

  5. 5

Add the salmon skin-side down, press down with a spatula, and cook for 2 minutes.

  6. 6

Flip and cook for another 2 minutes.

  7. 7

Flip again, reduce the heat to low, and add butter, garlic, and thyme to the pan.

  8. 8

Baste the salmon with the melted butter for 4 minutes.

  9. 9

Finish with lemon zest, lemon juice, and parsley.
