Crockpot Birria Tacos
Tender and flavorful slow-cooked beef birria made in a crockpot with a rich chili and spice-infused broth.

Ingredients
- 2-3 LBS Chuck roast
- 1 Can chipotle peppers in adobo
- 1/4 cup vinegar
- 1 Can Fire roasted tomatoes
- 2 TBSP Minced Garlic
- 1 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 cinnamon stick
- 2 bay leaves
- 1 tsp cloves
- 2 Cups Beef stock

Place the chuck roast into the slow cooker.

Blend together the chipotle peppers in adobo, vinegar, fire roasted tomatoes, minced garlic, oregano, smoked paprika, cumin, cloves, and beef stock until smooth.

Pour the blended sauce over the chuck roast in the slow cooker.

Add the cinnamon stick and bay leaves into the pot.

Cover and cook on low for 6 to 8 hours (or high for 4 to 6 hours) until the beef is tender and easily shreds.

Remove the cinnamon stick and bay leaves, shred the beef in the broth, and serve as tacos.
