Easy Mediterranean Chuck Roast Bowl

Tender, seasoned shredded beef chuck roast slow-cooked in beef broth and aromatics, served with a fresh cucumber mint feta yogurt sauce.

Ingredients

  • 2.5 lbs beef chuck roast
  • Salt and fresh pepper, to taste
  • 1 tbsp smoked paprika (1/2 tbsp per side)
  • 1 tbsp onion powder (1/2 tbsp per side)
  • 1 tbsp dried oregano (1/2 tbsp per side)
  • 1 tsp ground cumin (1/2 tsp per side)
  • 12-16 oz beef broth
  • 6-8 whole garlic cloves
  • 1 red or yellow onion, quartered
  • 2 sprigs fresh oregano
  • 3 heaping tbsp yogurt
  • 1 oz feta cheese
  • 2 small garlic cloves
  • 1 handful fresh mint
  • 1/2 to 1 Persian cucumber, finely diced or shredded
  • Cauliflower rice, for serving (optional)
  • Diced cucumber and tomato, for serving (optional)
  • Sumac, for garnish (optional)

Method

    Preheat oven to 350°F.

    Place the beef chuck roast into an oven-safe baking dish with a lid or foil.

    Season both sides of the roast with salt, fresh pepper, smoked paprika, onion powder, oregano, and cumin. Rub the spices in well.

    Pour in the beef broth, then add whole garlic cloves, quartered onion, and fresh oregano sprigs around the roast.

    Cover with a lid or foil and bake at 350°F for 2.5 to 3 hours.

    Remove the roast from the oven, shred the meat using two forks, mix well with the pan drippings, and return uncovered to the oven at 375°F for 45 minutes to 1 hour.

    Remove from the oven, shred again, and adjust seasoning as needed.

    In a small food processor, blend the yogurt, feta cheese, 2 small garlic cloves, mint, salt, and pepper until smooth. Fold in the diced or shredded Persian cucumber.

    Plate the shredded beef and sauce over cauliflower rice, then top with diced cucumber, tomato, fresh mint, and sumac as desired.
