Easy Vegetable Bake

A flavorful and hearty vegetable casserole packed with broccoli, cauliflower, and bell pepper, baked in a seasoned egg batter and topped with melted mozzarella.

Ingredients

  • 1 medium head broccoli, cut into medium florets
  • 1 small head cauliflower, cut into florets
  • 1 tbs olive oil
  • 1 small onion, diced
  • 1/2 red bell pepper, sliced
  • 3 eggs, lightly beaten
  • 5 tbs olive oil
  • 1 1/3 cup milk of choice
  • 1 cup flour of choice
  • 1/3 cup grated parmesan cheese
  • 1 tsp each paprika + garlic powder
  • salt and pepper to taste
  • 1/3 cup fresh parsley, chopped
  • 1 cup shredded mozzarella cheese

Method

    Bring a large pot of water to a boil. Add the cauliflower, bring back to a boil, and cook for 7 minutes. Add the broccoli and cook for another 2 minutes or until just fork-tender. Drain both vegetables well.

    While the vegetables boil, heat 1 tablespoon of olive oil in a small pan over medium heat and saute the onion for 3 minutes or until translucent.

    Preheat the oven to 350°F. Place the broccoli, cauliflower, onion, and red bell pepper in a 9x13-inch baking dish, spread evenly, and season with salt and pepper to taste.

    In a large bowl, whisk together the eggs, 5 tablespoons of olive oil, and milk. Mix in the flour, grated parmesan, paprika, garlic powder, salt, pepper, and chopped parsley.

    Pour the mixture evenly over the vegetables in the baking dish and top with shredded mozzarella cheese.

    Bake for 40-45 minutes or until golden brown on top. Allow to cool for 10 minutes before slicing.
