Garlic Butter Steak Bites with Mac and Cheese
Tender seared ribeye steak bites tossed in garlic butter paired with rich, baked homemade mac and cheese.
Ingredients
- 2 lbs ribeye, cut into bite size pieces
- 1 tbsp oil
- 3 tsp of Cajun or Montreal seasoning
- 3 tbsp butter
- 3-4 garlic cloves, minced
- 1 tsp parsley, chopped
- 8 oz mozzarella cheese, grated
- 8 oz Colby Jack cheese, grated
- 4 oz sharp cheddar yellow, grated
- 8 oz macaroni pasta
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- 2 tbsp salted butter
- 2 tbsp all-purpose flour or 1:1 gluten free flour
- 6 oz milk
- 1 cup heavy cream

Season steak with oil and Cajun seasoning.

Sear steak on high heat for a few minutes on each side, then remove from the pan.

Melt butter in the pan and add minced garlic.

Add steak bites back in, coat in the garlic butter, and sprinkle parsley over top.

Preheat oven to 350°F.

Boil macaroni in salted boiling water until slightly undercooked.

In a large pot or skillet over medium-low heat, melt butter and add half of the garlic powder, smoked paprika, salt, and pepper. Cook for about 30 seconds until fragrant.

Whisk in flour 1 tablespoon at a time to avoid clumps until fully incorporated and smooth.

Pour in milk a little at a time while whisking, followed by heavy cream a little at a time until fully combined.

Turn off heat or reduce to low. Add half of the shredded cheese mixture a handful at a time, ensuring it melts before adding more.

Stir in the remaining seasonings and the cooked macaroni until fully combined.

Transfer to a baking dish or cast iron skillet, layering the remaining shredded cheese mixture in the middle and on top.

Bake for 20 minutes, then broil for 2-3 minutes until bubbly and golden.
