Ingredients

  • 1 large zucchini
  • Cheddar cheese
  • Garlic powder
  • Smoked paprika (optional)
  • Sandwich fillings of choice (such as peppercorn mayo, smoked turkey breast, beef bacon, lettuce, tomato, and red onion)

Method

  1. 1

    Preheat your oven to 400°F.

  2. 2

Use a mandoline or vegetable peeler to slice the zucchini into thin, even strips.

  3. 3

Place the zucchini slices on a paper towel and press gently to remove excess moisture.

  4. 4

Line a baking tray with parchment paper and sprinkle a thin layer of cheddar cheese directly onto it.

  5. 5

Arrange the zucchini slices in an overlapping pattern on the cheese to form a rectangle.

  6. 6

Season with garlic powder and optional smoked paprika, then add another layer of cheddar cheese on top.

  7. 7

Bake for 14–15 minutes, until the edges are crispy and golden.

  8. 8

Let cool for a minute, then slice in half to create two bread pieces.

  9. 9

Assemble the sandwich with your desired fillings.
