One Pan Cajun Lime Chicken

A creamy, flavorful one-pan chicken dish with a balance of Cajun spices and zesty lime, served over rice.

Ingredients

  • 600g chicken thighs
  • Tbsp of cajun seasoning
  • Tsp of smoked paprika
  • Tsp of onion granules
  • Tsp of garlic granules
  • Tsp of oregano
  • Tbsp of extra virgin olive oil
  • 1 shallot - finely chopped
  • 1 sweet red pepper - finely chopped
  • 3 cloves of garlic - crushed
  • Tsp of smoked paprika
  • Tsp of cajun seasoning
  • 200ml of chicken stock
  • 150ml of single cream
  • 100g of cherry tomatoes
  • 1 lime - cut in half
  • 125g of basmati rice, per serving
  • Tbsp of soured cream, per serving
  • 50g of tender stem, per serving

Method

    Season the chicken thighs evenly with cajun seasoning, smoked paprika, onion granules, garlic granules, and oregano.

    Heat the olive oil in a large pan over medium-high heat and sear the chicken thighs until cooked through and golden on both sides, then remove and set aside.

    In the same pan, sauté the chopped shallot, red pepper, and crushed garlic until softened.

    Add the smoked paprika, cajun seasoning, chicken stock, single cream, cherry tomatoes, and the juice from the lime halves.

    Simmer the sauce gently until it thickens slightly and the tomatoes begin to soften.

    Return the cooked chicken thighs to the pan and let them heat through in the sauce.

    Serve hot with basmati rice, tenderstem broccoli, and a spoonful of soured cream.
