Original post

Ingredients

  • 1 pound bacon, chopped
  • 1/2 onion, diced
  • 1 1/2 pounds chicken, cut into bite-sized cubes
  • Rotisserie chicken seasoning and buttery steak house seasoning (or seasoning of choice)
  • 3 tablespoons corn starch
  • 1 carton low sodium chicken broth
  • 1 pound pasta
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese, divided

Method

  1. 1

Cook chopped bacon in a large skillet over medium heat until about 3/4 cooked through, then add diced onion and cook until translucent and bacon is crispy.

  2. 2

Remove bacon and onions from the skillet and drain on paper towels, leaving the bacon grease in the pan.

  3. 3

Season cubed chicken as desired, then toss with corn starch until well coated.

  4. 4

Add chicken to the skillet with the bacon grease and cook over medium-high heat for 3 minutes on each side, then toss for another 30 seconds before removing from the pan.

  5. 5

Pour chicken broth and pasta into the skillet, bring to a boil over high heat, and cook for about 8 minutes or until liquid is absorbed and pasta is cooked through.

  6. 6

Reduce heat to low, stir in heavy cream, then add 1 cup of shredded cheddar cheese and stir until melted before adding the second cup and mixing until melted.

  7. 7

Return cooked bacon and chicken to the skillet and toss to combine.
