One Pan French Onion Chicken w/ Rice

An easy one-pan dish combining classic French onion flavors with chicken thighs and rice.

Ingredients

  • 6 Chicken Thighs (boneless/skinless)
  • 4 Cloves Garlic
  • 3T Olive Oil
  • 2T Balsamic Vinegar
  • 1T Butter
  • Salt & Pepper, taste
  • 2t Dried Thyme
  • 2 Onions
  • 1.5C Long Grain Rice
  • 2C Chicken Broth
  • 1C Heavy Cream

Method

    Preheat the oven to 425°F.

    Toss the chicken with 2T olive oil, 1T balsamic vinegar, garlic, salt, pepper, and 1t dried thyme.

    In an oven-safe pan, melt 1T butter with 1T olive oil, then add the onions and season with salt and pepper.

    Cook onions until golden (about 15 minutes), remove from heat, stir in 1t thyme and 1T balsamic vinegar, toss, and set aside.

    Add a bit more oil to the pan and sear the chicken thighs for about 2 minutes per side, then remove from pan.

    Add the rice to the pan and cook for 3 minutes.

    Pour in the chicken broth and heavy cream, season with additional salt and pepper, and bring to a simmer.

    Return the onions and chicken to the pan, cover with foil, and bake for 20-25 minutes.
