  • 3 tbs Smokey BBQ Rub (Bon Cuisine)
  • 2 tbs SPG (Bon Cuisine)
  • 2 tbs Olive Oil
  • 50g Butter
  • 1 Sprig of Rosemary
  • 1 Sprig of Thyme
  • 100g Butter (for sauce)
  • 1 tbsp minced Garlic
  • 1 diced white Onion
  • 2 tbsp Tomato Paste
  • 1 tbsp Paprika (Bon Cuisine)
  • 150ml Beef Stock
  • 400ml Heavy cream
  • 100g Parmesan cheese

Method

  1. 1

Season the ribeye steak evenly on all sides with the smokey BBQ rub and SPG.

  2. 2

Heat olive oil in a heavy skillet over high heat, add the steak, and sear until a crust forms.

  3. 3

Add 50g butter, rosemary, and thyme to the pan, basting the steak with the melted butter until cooked to your desired doneness, then remove from the pan and let rest.

  4. 4

In a saucepan over medium heat, melt 100g butter and sauté the diced onion and minced garlic until softened and fragrant.

  5. 5

Stir in the tomato paste and paprika, cooking for 1 to 2 minutes.

  6. 6

Pour in the beef stock and heavy cream, whisking to combine, and bring to a gentle simmer.

  7. 7

Stir in the Parmesan cheese until melted and the sauce is smooth and thickened.

  8. 8

Slice the steak and serve warm with the creamy sauce spooned over the top.
