Spicy Spinach Mushroom Pasta

A creamy, flavorful pasta dish packed with sautéed mushrooms, spinach, and a rich cheese sauce with a hint of spice.

Ingredients

  • 10 oz pasta
  • 20 oz chopped mushrooms - white and oyster mushrooms
  • 3 garlic minced
  • 1/2 jalapeño chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika or cayenne
  • 1/2 teaspoon turmeric
  • 1 tablespoon olive oil
  • 1/2 onion diced
  • 4 garlic minced
  • 2 handful spinach
  • 2 tablespoons butter
  • 1 tablespoon all purpose flour
  • 8 oz milk
  • 8 oz broth
  • 2 cups (16oz) heavy whipping cream
  • 1/4 Parmesan cheese
  • 1-2 cups mozzarella cheese
  • Chili oil (optional)
  • Chili flakes (optional)

Method

    Cook pasta in salted water to al dente, do not overcook.

    Cook mushrooms in butter for 5-6 minutes until browned, then add garlic, jalapeño, and seasonings (salt, pepper, paprika/cayenne, turmeric), and remove from heat.

    Sauté onion, garlic, and spinach in olive oil for 1-2 minutes, then remove.

    Add butter and flour over low-medium heat and whisk for 1-2 minutes until browned, then slowly pour in milk and broth.

    Sprinkle in Parmesan cheese, then add the sautéed spinach and heavy whipping cream once the sauce starts to thicken.

    Adjust salt and pepper to taste.

    Add pasta into the sauce, then top with the cooked mushrooms and mozzarella cheese.

    Cover with a lid until melted, and optionally drizzle with chili oil and chili flakes before serving.
