Spicy Vodka Chicken Parm Pasta
Crispy air-fried chicken cutlets topped with spicy vodka sauce and melted mozzarella, served alongside pasta.
Ingredients
- 1 large chicken breast, butterflied and pounded thin
- 2 eggs
- 2 cups seasoned breadcrumbs (or panko seasoned with salt, Italian seasoning, garlic & onion powder)
- 1/4 cup parmesan cheese, freshly grated
- Slices of mozzarella
- Cooking oil spray
- Salt, to taste
- 1 tbsp olive oil & butter
- 1/2 large onion, finely chopped
- 4-6 cloves garlic, minced
- 1/2 tsp red pepper flakes
- 1 & 1/2 tbsp tomato paste
- 1 or 2 shots of vodka, wine or broth
- 1 cup heavy cream
- 1 tsp Italian seasoning
- 1 tsp smoked paprika
- 3/4 cup Parmesan
- 2 tbsp butter
- 8 oz pasta

Slice chicken breasts in half, place in a plastic bag or wrap, and pound until thin.

Dip chicken into whisked egg, then into breadcrumbs mixed with 1/4 cup parmesan cheese, pressing down firmly.

Thoroughly spray the breaded chicken with oil and air fry at 380°F for 10 minutes.

Immediately sprinkle salt over the fried chicken.

Melt 1 tbsp butter and oil in a large pan and sauté chopped onion until translucent.

Add minced garlic and red pepper flakes; once fragrant, stir in tomato paste and cook down for a few minutes.

Pour in vodka and cook until most of the liquid evaporates.

Incorporate heavy cream, Italian seasoning, smoked paprika, and 3/4 cup Parmesan into the pan.

Cook pasta until al dente and toss into the sauce with 2 tbsp butter and pasta water as needed.

Top the chicken with a spoonful of vodka sauce and slices of mozzarella.

Air fry the chicken again for 1-2 minutes until the cheese is melted, then serve with the pasta.
